Update the tenant AI agent persona / prompt config (partial patch — send only \`manager\` and/or \`coach\`, and within each only the fields you change; pass null to clear a string field). Idempotent. Returns the full merged config. Presets: temperature strict|balanced|creative, length short|medium|long.
